Jim's Lemon Meringue Pie!

Hello! Today Jim made a lemon meringue pie, but with a bit of a difference! If you want to make one too - here is his not so secret recipe! 

Firstly you will need to get your ingredients: half pack ginger biscuits, half a block of butter, jar of lemon curd, one lemon, four eggs and 200g caster sugar...oh, and one baking tin, with removable bottom!

Bish bash bosh... here is what you need to do next...

Familiarise yourself with the kitchen environment.

Bash up the biscuits and mix them with the butter, once the butter has been heated and melted in a pan...

Set into the tin and put in the oven to set...

Ta-dah! One ginger base!
                                   
Put the lemon curd into the tin...

...along with some zest of lemon.

Ensure you do this under careful robot supervision...

...and if you have a puppy, they can supervise too!

Break four egg whites into a bowl, and slowly whisk in the caster sugar.


Whisk until you get soft peaks...

Pour meringue onto lemon...

Make sure it looks a bit like this.


Put it in the oven on 180C/fan or 160C or gas mark 4, for 18 - 20 mins or until it looks like this.

Let the pie stand for 1-2 hours, then the best part...EAT IT! Hope you enjoy making this lemon meringue pie with a twist - a la Jim style! X
